Just thought I'd drop a few lines on this little collection of locally handmade products we are selling along with the legends from Blue Fence Picture Framing in Moruya. Too often waste product is treated as a necessary evil and then disposed of once it has served its primary purpose, well we have found a secondary purpose for our hessian coffee sacks! once we are finished with them we hand them over to a local seamstress who spends hours with needle and thread turning them from sacks into beautiful lampshades, computer bags, travel bags, back packs and all kinds of ladies hand bags adding bits of fabric cutoffs to line the bags and pretty them up a bit. This fantastic range of quality products can be viewed and purchased in-store or made to order (size+style) with a percentage of the purchase cost going directly to the Philippines with a team of locals who make the journey at least once a year to help support impoverished communities in and around Bacolod City. Last year I took the opportunity to personally make the trip over and helped build a Church - Community centre - Storm shelter. In all my travels I have never been involved in such a genuine community of people. The people in the Philippines are amazing and their communities are already hell bent on helping each other out so it was just such a pleasure to join them in helping those in need around them. I have made a commitment to personally continue traveling back to the Philippines as often as I can. So now you can buy your trendy little bag of choice while helping out the beautiful people of the Philippines. You may well ask why we chose to help the people of the Philippines in such a way? An opportunity arose to help provide aid to people which is something I felt passionate about. We can honestly say that 100% of the money put aside from the sales of the bags gets into their hands. No administration fees, nothing is taken out as we pay our own way (flights accomodation + food). In the effort to help these people we believe this the best and most transparent place to start........ There is so much more I could say on this story but instead I will add a few pictures of the last project and the Recycled bags :)
What seems like just a few short weeks ago we installed our Slayer Steam (purchased through Di Pacci Coffee Company in Sydney). It arrived in all its Beauty and our team of techs quickly began the instal... from what we had heard through other cafes using the Steam and the reviews/forums that follow this product our expectations were driven sky high and we were expecting the nectar of the Gods to flow from the minute it was plugged in .. as we all know things are never that simple ... Firstly for anyone contemplating the purchase or in the process of installing one breathe, because yes they are well worth their weight in gold! Once we installed the steam Lewis and I began to dial it in, immediately we noticed that everything was slightly different and the plug and play method was not going to work. The dose needed for a good extraction was different our method of tamp changed and we introduced the acacia lunar scales as small differentials in dose from the EVO f64s were now showing up through channelling or sloppy pucks. I think it would be fair to say it took us about a week to get to know this beast well enough to be confident in it. It is worth noting that we have changed our showers from IMS to VSTs as we found the IMS ones tended to buckle inward causing water to flow around the shower instead of through it... So, here is what we found, the Slayer Steam does not automatically make you a better barista overnight but its does push you to new levels by highlighting your weak spots hence forcing you to zone in and improve your methods and skills. Now, lets have a look at the Steam component; The Slayer Steam has most definitely addressed the Slayers predecessors steam issues and delivers a beautiful vaporised silky smooth texture, however once again the steam technology and its function are no walk in the park and does not change but rather enhances the fact that the barista must be focused and pay close attention to detail. My favourite thing about the Slayer Steam would have to be it's multi boiler technology which without a doubt keeps the machine running at very consistent levels all day everyday! And thank goodness finally we have a drip tray with all the right angles for draining the dregs away!!! As for my title Pros and Cons, the honest truth is I am yet to discover a negative on this sexy beast !!!
Well after traveling to Panama late in 2016 to see what all the fuss was about regarding Panama Geisha Coffee we have been able to make a well informed decision on where this particular coffee sits on a scale of 1-best. Obviously "the best"coffee can not simply be determined by facts and spreadsheets alone as coffee is such a personal experience and everyone has a unique set of taste buds and olfactory sensors which automatically means that there will be different opinions on this subject. Also peoples personal experience with a particular growing region, country of origin and cafe/coffee outlet will most of the time change ones perspective of a particular product. The above no doubt being the reason that I personally am so taken by this coffee. I mean you fly into a beautiful place like Panama, visit the Miraflores Canal de Panama maybe take a boat ride to the rainforest where your boat becomes the amusement park of monkeys, then fly to the city of David (panama) drive up into the foothills to a bustling little town known as Boquete and then on into the mountains to coffee plantations which are sprawled out amongst the trees and across the mountains. Meet the plantation owners who warmly welcome you, sit through dinner with you and share some beautiful Argentinian wines by the open fire before touring and getting to know the plantation the following morning. So you can see how one can fall in love with this fairytale like place. then with all that pumping through your senses you sit at a cupping table some 1800m above see level and for the first time sip at Panama Geisha Coffee, Of course its going to be the best thing you have ever tasted! I guess the real test comes when you have to leave this amazing place and head home to the usual hustle bustle and stresses of everyday work and life and keeping a cafe running in a ever growing and competitive market, then your order arrives and once again you test the product will it measure up? Well in this case I was surprised to find it exactly how I remembered it just as good and unique as up on that mountain, and at this point we made the call that this is simply one of the best coffees in the market place to date. Let me explain what makes this coffee a stand out from any other coffees I have tried to date: Panama Geisha has a superbly high level of stone fruit sweetness combined with a delicate tart acidity of peach, beautiful jasmine notes and a clean crisp aftertaste, its mouthfeel is extremely smooth and well balanced.
So on a scale of 1-best we rate it "simply the best"
